  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F and prepare a 9-inch square baking dish with butter and parchment paper.
  2. In a large sauté pan, boil the apple cider until reduced by half (about 5 minutes). Measure out to ensure it is ¾ cup and whisk in the cold butter.
  3. In a medium bowl, whisk together the eggs, sugars, olive oil, sour cream, baking powder, baking soda, spices, and salt. Slowly incorporate the boiled cider mixture until well combined.
  4. Stir in the flour until just mixed; avoid overmixing to maintain fluffiness.
  5. Pour batter into the prepared dish and bake for 22–25 minutes until golden brown.
  6. Let cool for five minutes before brushing with melted butter and sprinkling with cinnamon sugar.
  7. Allow to cool completely before slicing into squares.
