  • ¼ cup sour cream or Greek yogurt (room temperature)
  • 2 large eggs (room temperature)
  • 1 teaspoon pure vanilla extract
  • ½ cup milk (room temperature)
  • 1 ½ cups diced apples (Granny Smith or Honeycrisp)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners.
  2. In a bowl, combine flour, light brown sugar, granulated sugar, and cinnamon for the crumble topping; mix in melted butter until small clumps form.
  3. In another bowl, whisk together the dry ingredients: flour, baking powder, salt, cinnamon, and nutmeg.
  4. Use an electric mixer to cream together light brown sugar, butter, and granulated sugar until fluffy. Add eggs, sour cream, and vanilla; mix well.
  5. Gradually add half of the dry mixture to the wet ingredients; stir in milk before adding the remaining dry ingredients until just combined. Gently fold in diced apples.
  6. Fill muffin cups about three-quarters full with batter and top generously with crumble mixture.
  7. Bake for approximately 20 minutes until a toothpick inserted into the center comes out clean. Allow muffins to cool in the pan before transferring them to a wire rack.
