  • 2 large baking potatoes
  • 200g block of feta cheese
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chili flakes
  • 1 head of garlic (top cut off)
  • 1 lemon (for zest and juice)
  • 1 tbsp honey (for drizzling)
  • 1/4 cup | 20g fresh basil (for garnish)

Instructions

  1. Preheat oven to 200C | 390F.
  2. Wash, cube, and par-boil potatoes for 6-8 minutes; drain and steam dry.
  3. In a baking dish, combine potatoes with olive oil, thyme, oregano, salt, pepper, and chili flakes.
  4. Roast for 30-40 minutes until golden brown.
  5. Add feta and lemon juice; roast for an additional 15 minutes.
  6. Squeeze garlic from skins into a bowl; mash lightly.
  7. Combine mashed garlic with remaining lemon juice; mix into potatoes.
  8. Drizzle honey over the top before serving.
