Ingredients

Scale
  • 2.5 lbs beef chuck
  • 2 tablespoons vegetable oil
  • 1 large onion
  • 4 cloves garlic
  • 1 tablespoon fresh ginger
  • 2 tablespoons red curry paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 can (14 oz) full-fat coconut milk
  • 1/2 cup beef broth

Instructions

  1. In a large pot or Dutch oven over medium heat, heat vegetable oil until shimmering. Sauté chopped onion for about 5 minutes until translucent. Stir in minced garlic and grated ginger; cook for an additional minute.
  2. Mix in red curry paste, ground cumin, ground coriander, turmeric, cinnamon, and optional cayenne pepper. Cook while stirring for about 2 minutes to toast the spices.
  3. Add beef chunks to the pot and stir well to coat them in the spiced mixture. Brown on all sides for about 5-7 minutes.
  4. Pour in coconut milk and beef broth; bring to a gentle simmer while scraping up any bits stuck to the bottom of the pot. Reduce heat to low, cover, and let simmer for about 1.5 hours or until beef is tender.
  5. Taste and adjust seasoning as needed before serving hot over rice or with naan.
