  • 12 oz rotini pasta
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • 2 tbsp butter
  • Salt and black pepper, to taste

Instructions

  1. Cook rotini in salted boiling water until al dente (8-10 minutes). Reserve ½ cup pasta water, then drain.
  2. Season chicken with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.
  3. In a skillet over medium-high heat, sauté chicken in olive oil and butter until fully cooked (4-5 minutes per side). Remove from pan.
  4. In the same skillet, sauté minced garlic for 30 seconds. Add heavy cream and milk; stir in Velveeta until melted.
  5. Mix in mozzarella cheese and Cajun seasoning until thick and creamy. Combine with pasta using reserved pasta water if needed.
  6. Return chicken to the pan or serve separately with garnish.
