  • 1 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 4 tbsp butter
  • 4 cloves garlic
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded cheddar cheese
  • 1 lb rigatoni pasta
  • Salt to taste
  • Optional: chopped chives for garnish

Instructions

  1. Cook rigatoni according to package directions until al dente; drain and set aside.
  2. In a bowl, toss cubed chicken with olive oil, Cajun seasoning, smoked paprika, garlic powder, and black pepper.
  3. Heat 2 tbsp butter in a large skillet over medium-high heat; add chicken and cook until golden brown (6-8 minutes). Remove from skillet.
  4. In the same skillet, melt remaining butter; add minced garlic and sauté for about 30 seconds.
  5. Whisk in flour; cook for 1 minute to create a roux.
  6. Gradually whisk in milk and chicken broth; bring to a simmer while stirring until smooth.
  7. Lower heat; stir in cheeses until melted. Season with salt to taste.
  8. Add cooked rigatoni and chicken back into the sauce; toss to coat evenly.
  9. Serve immediately with optional chives for garnish.
