  • ½ cup bell pepper (diced)
  • 3 cloves garlic (minced)
  • 1 packet chili seasoning mix
  • 2 cups macaroni (uncooked)
  • 1½ cups shredded cheddar cheese
  • ½ cup heavy cream
  • 8 oz tomato sauce
  • Kidney beans

Instructions

  1. In a skillet, brown ground beef over medium heat; drain excess fat.
  2. Add onion, bell pepper, and garlic; sauté until softened.
  3. Mix in chili seasoning, tomato sauce, diced tomatoes, broth, and kidney beans; simmer for 10 minutes.
  4. Cook macaroni according to package directions until al dente.
  5. In another pan, melt butter and whisk in flour to make a roux. Gradually add heavy cream and milk until thickened.
  6. Combine cooked macaroni with the chili mixture and cheese sauce; stir well.
  7. Transfer to a baking dish, top with cheddar cheese, and bake at 350°F for 15–20 minutes until bubbly.
