  • 1 cup cooked rice (white or brown)
  • 1 can black beans, rinsed and drained
  • 1 cup corn (fresh or frozen)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/2 cup red onion, diced
  • 1/2 cup feta cheese, crumbled (optional)
  • Extra cilantro for garnish
  • Lime wedges for serving

Instructions

  1. In a medium bowl, mix lime juice, olive oil, cilantro, garlic, cumin, chili powder, salt, and pepper to create the marinade.
  2. Coat the flank steak in the marinade; seal in a bag or cover in a dish. Refrigerate for at least 30 minutes (ideally up to 4 hours).
  3. Cook rice according to package instructions.
  4. Heat black beans in a saucepan until warmed through.
  5. Grill the marinated steak on medium-high heat for about 4-5 minutes per side for medium-rare (130°F internal temperature). Let rest for 5-10 minutes before slicing against the grain.
