  • 1 1/2 cups cake flour
  • 2 tsp. corn starch
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cup cold unsalted butter, cubed
  • 1 1/4 cups granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp. vanilla extract
  • 1 cup packed brown sugar
  • 6 Tbsp. softened butter
  • 2 Tbsp. cinnamon
  • 8 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, combine the brown sugar, softened butter, and cinnamon until smooth. Set this mixture aside while you prepare the cookie dough.
  3. In a large bowl, whisk together the all-purpose flour, cake flour, corn starch, baking soda, baking powder, and salt. Set this mixture aside for later use.
  4. In your stand mixer, add cubed cold butter and mix on medium speed for about 1 minute until creamy. Gradually add granulated sugar; continue mixing until fully combined (about 1–2 minutes).
  5. Add in two large eggs, two egg yolks, and vanilla extract. Mix until just combined – be careful not to overmix.
  6. Gradually add dry ingredients, incorporating about 1/4 cup at a time into the wet mixture until fully combined.
  7. On a clean surface, press dough into a long rectangle using your hands (no rolling pin needed).
  8. Spread cinnamon filling evenly across the dough rectangle.
  9. Starting from one long edge, carefully roll up the dough into a log shape.
  10. Slice rolled dough into approximately 10–12 equal pieces.
  11. Roll each piece into balls, ensuring filling is sealed inside. Place on a baking sheet and bake for about 9–11 minutes or until edges are golden brown.
  12. Remove from oven and allow cookies to cool on the baking sheet for around 10–15 minutes before transferring them to a cooling rack.
  13. In another bowl, beat together softened cream cheese and butter until smooth. Add powdered sugar, vanilla extract, and salt; mix until well combined.
  14. Once cookies are cool, spread cream cheese frosting generously on top of each cookie.
