  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/4 teaspoon salt
  • 2 to 3 tablespoons Cinnamon Sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease mini loaf pans and line with parchment paper.
  2. In a mixing bowl, whisk together the egg, granulated sugar, brown sugar, pumpkin puree, canola oil, and vanilla until smooth.
  3. In another bowl, combine the all-purpose flour, baking powder, baking soda, pumpkin pie spice, and salt. Gradually add to the wet mixture until just combined.
  4. Pour batter into prepared pans and sprinkle with cinnamon sugar on top; gently swirl with a knife.
  5. Bake for 28 to 30 minutes or until a toothpick comes out mostly clean. Cool in pans for 10 minutes before transferring to wire racks.
