  • 2.5 lbs beef chuck or stew meat
  • 2 Tbsp coconut oil
  • 1 large onion
  • 4 garlic cloves
  • 1 Tbsp fresh ginger
  • 2 Tbsp red curry paste
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 tsp ground cinnamon
  • 1 tsp chili flakes
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup beef broth
  • 1 Tbsp tomato paste
  • 2 Tbsp brown sugar

Instructions

  1. In a large pot, heat coconut oil over medium heat. Sauté sliced onion until translucent, about 5 minutes.
  2. Add minced garlic and grated ginger; cook for another 2 minutes until fragrant.
  3. Stir in red curry paste, ground cumin, ground turmeric, ground cinnamon, and chili flakes (if using). Mix well.
  4. Increase heat slightly and add beef chunks; brown on all sides for about 5–7 minutes.
  5. Pour in coconut milk, beef broth, tomato paste, and brown sugar; stir until combined.
  6. Bring to a gentle boil, then reduce heat to low. Cover and simmer for at least 1.5 hours or until beef is tender.
  7. Serve hot over jasmine rice or with your choice of sides.
