  • 1 1/4 cup all purpose flour, spooned and leveled
  • 3/4 cup cake flour, spooned and leveled
  • 1 tsp. cornstarch
  • 1 tsp. cinnamon
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 8 Tbsp. cold butter, unsalted, cut into cubes
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 tsp. vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 2 Tbsp. unsalted butter, melted
  • 3 Tbsp. heavy cream or milk
  • 1 cup powdered sugar, sifted
  • 1 tsp. vanilla
  • pinch salt

Instructions

  1. Prepare the streusel by mixing flour, brown sugar, cinnamon, and salt; incorporate softened butter until clumpy. Chill.
  2. Preheat oven to 400°F (200°C) and line baking sheets.
  3. In a bowl, combine all-purpose flour, cake flour, cornstarch, baking soda, baking powder, and salt.
  4. Cream cold butter and sugars in a stand mixer until smooth.
  5. Add egg and vanilla to the creamed mixture; blend well.
  6. Gradually mix in the dry ingredients until fully incorporated.
  7. Scoop dough into balls on prepared sheets and make indents.
  8. Fill indents with streusel and bake for 8-11 minutes until golden at edges.
  9. Cool slightly before drizzling with icing made from powdered sugar and vanilla.
