  • 2 soft-boiled eggs
  • 2 small chicken or plant-based breakfast sausages
  • 1 cup cottage cheese
  • 1 avocado, sliced
  • 1 cup sauerkraut
  • 1 kiwi, peeled and sliced
  • 1 cup sliced strawberries
  • 1 cup blackberries
  • Toasted sourdough or crusty bread

Instructions

  1. Boil the eggs in a saucepan for 7–8 minutes. Transfer to an ice bath before peeling.
  2. In a frying pan over medium heat, cook the sausages until browned (about 6–8 minutes).
  3. In a serving bowl, add cottage cheese on one side and arrange halved eggs, sausages, sauerkraut, avocado slices, kiwi, strawberries, and blackberries around it.
  4. Serve with toasted bread on the side and season with salt, pepper, and chili flakes to taste.
