Ingredients

  • 1½ cups fresh corn (or thawed frozen corn)
  • 1½ cups cherry tomatoes (halved)
  • ½ cup cucumber (finely chopped)
  • 2 tablespoons fresh basil (minced)
  • 3 tablespoons olive oil
  • 1 tablespoon lime juice
  • Salt to taste
  • Optional: Crumbled feta cheese and Italian dressing

Instructions

  1. In a small bowl, whisk together 2 tablespoons of olive oil, lime juice, and salt; set aside.
  2. Heat the remaining tablespoon of olive oil in a skillet over medium heat. Add corn and cook until tender (about 5-7 minutes).
  3. In a large mixing bowl, combine cooked corn, halved cherry tomatoes, chopped cucumber, and minced basil.
  4. Refrigerate until ready to serve. Just before serving, drizzle with dressing and top with crumbled feta cheese if desired.
