  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 4 ounces softened cream cheese
  • 1/4 cup granulated sugar (for filling)
  • 3 tablespoons all-purpose flour (for filling)

Instructions

  1. Preheat your oven to 350°F and prepare a 9×5-inch loaf pan.
  2. In a large bowl, combine the egg, pumpkin puree, brown sugar, granulated sugar, coconut oil, sour cream, vanilla extract, cinnamon, pumpkin pie spice, ground nutmeg, and salt until fully blended.
  3. Add in the flour, baking powder, baking soda, and optional salt. Gently fold these dry ingredients into the wet mixture until just combined.
  4. Pour about two-thirds of this batter into your prepared loaf pan and smooth out the top.
  5. In another bowl, whisk together the cream cheese, sugar, and flour for the filling until smooth; pour it over the batter in your loaf pan.
  6. Top with the remaining pumpkin bread batter and gently smooth out the layer.
  7. Bake in your preheated oven for about 48 minutes or until the top appears domed and golden, and a toothpick inserted in the center comes out clean.
  8. Allow your bread to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely before slicing.
