  • 2 lbs fresh tomatoes (Roma or vine-ripened)
  • 1 whole head of garlic
  • 1 small onion
  • 2 tbsp olive oil
  • 2 cups vegetable or chicken broth
  • ½ cup heavy cream (or coconut milk)
  • ¼ cup fresh basil leaves
  • Salt and black pepper

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Halve the tomatoes and arrange them on the baking sheet. Drizzle with olive oil, salt, and pepper.
  3. Cut off the top of the garlic head, drizzle with oil, wrap in foil, and place alongside tomatoes.
  4. Roast for 30-35 minutes until caramelized.
  5. In a large pot, sauté chopped onion in olive oil until soft.
  6. Squeeze roasted garlic into the pot; add tomatoes, broth, and basil.
  7. Blend until smooth using an immersion blender.
  8. Stir in cream (or coconut milk), simmer for 5-10 minutes, adjust seasoning, and serve warm.
