Creamy Zucchini Sauce is a luscious, herb-infused delight that transforms your pasta dishes into comfort food masterpieces. This easy-to-make sauce combines fresh zucchini, aromatic herbs, and creamy goodness, making it a versatile addition to your culinary repertoire.

  • 12 ounces dry pasta
  • 2 ½ pounds zucchini
  • ¾ cup extra virgin olive oil
  • 1 cup sweet onion (diced)
  • 1 ½ tablespoons garlic (minced)
  • 1 cup heavy cream
  • ¾ cup Romano cheese (grated)
  • Fresh basil, oregano, and mint (chopped)

Instructions

  1. Cook pasta according to package instructions; reserve 1 cup of pasta water before draining.
  2. Shred zucchini using a box grater or food processor and set aside.
  3. In a large skillet over medium-high heat, heat olive oil and sauté diced onion until soft (about 3 minutes).
  4. Add minced garlic and red pepper flakes; cook for an additional minute.
  5. Stir in shredded zucchini, kosher salt, black pepper, half of the herbs, cover, reduce heat to medium-low, and simmer for 15 minutes.
  6. Remove lid, add heavy cream and remaining herbs; bring back to heat.
  7. Stir in grated Romano cheese; adjust thickness with reserved pasta water if needed.
