  • 1/3 cup light brown sugar
  • 1 (15 oz) can pure pumpkin puree or 2 cups homemade pumpkin puree
  • 3/4 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon fine sea salt

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Roll out the pie crust and fit it into a pie dish, crimping the edges.
  3. In a mixing bowl, whisk the eggs until fluffy. Add sugars, heavy cream, vanilla, and spices; mix until combined.
  4. Fold in pumpkin puree until smooth.
  5. Pour the filling into the crust and bake for 15 minutes at 425°F; then reduce temperature to 350°F (175°C) and bake for another 45 minutes until set.
