  • 8 large eggs
  • ¾ lb Canadian bacon, diced
  • 6 English muffins, diced
  • 1 packet hollandaise sauce mix
  • 3 stalks green onions, chopped

Instructions

  1. Grease a 9×13 baking dish.
  2. In mixing bowls, whisk together milk, eggs, green onions, onion powder, and salt until well combined.
  3. Layer half of the Canadian bacon in the baking dish followed by diced English muffins and the remaining bacon. Pour the egg mixture evenly over the top.
  4. Cover and refrigerate overnight.
  5. Preheat oven to 375°F (190°C). Bake covered for 30 minutes; then uncover and bake an additional 15 minutes until golden brown.
  6. Meanwhile, prepare hollandaise sauce as per package instructions.
