Garlic Herb Roasted Chicken Breast with Baby Potatoes is a delightful and satisfying dish that effortlessly combines tender chicken infused with aromatic herbs and golden roasted baby potatoes.   • 1 large chicken breast roast (about 800 g)
  • 600 g baby potatoes (red and yellow mix if possible)
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Juice of lemon
  • Salt & pepper
  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 200C (390F).
  2. Rub the chicken breast with olive oil, minced garlic, parsley, thyme, rosemary, paprika, lemon juice, salt, and pepper.
  3. Toss the baby potatoes with olive oil, salt, and pepper in a mixing bowl.
  4. Place the seasoned chicken in the center of a baking dish and scatter the potatoes around it.
  5. Roast for about 40-45 minutes until the chicken reaches an internal temperature of at least 75C (165F).
  6. Remove from the oven; deglaze the pan with chicken broth to create a sauce.
  7. Slice the chicken and serve it drizzled with the pan sauce alongside roasted baby potatoes.
