  • 1 slice rustic bread (sourdough or country loaf)
  • 1 cup mushrooms, sliced
  • 1 tsp olive oil
  • 2 eggs
  • Salt & pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • 1 slice rustic bread
  • Avocado, sliced or mashed
  • 56 cherry tomatoes, halved
  • 2 tbsp feta cheese, crumbled
  • Salt & pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Sautéed Mushroom & Scrambled Egg Toast: Heat olive oil in a skillet over medium heat. Sauté mushrooms with salt for about 4–5 minutes until golden brown. In a separate pan, scramble the eggs until soft and creamy. Toast the rustic bread until golden brown. Layer the sautéed mushrooms on the toasted bread followed by scrambled eggs. Garnish with freshly chopped parsley.
  2. Prepare the Avocado, Cherry Tomato & Feta Toast: Toast another slice of rustic bread until crispy. Spread or layer avocado slices on top of the toasted bread. Arrange halved cherry tomatoes over the avocado spread. Sprinkle crumbled feta cheese on top and season with salt and pepper. Finish with a sprinkle of fresh parsley.
