  • 1 large chicken breast
  • 2 medium sweet potatoes
  • 1 ripe avocado
  • 1 cup cherry tomatoes, halved
  • 1/4 small red onion, thinly sliced
  • Juice of 1/2 lime
  • 2 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt & pepper to taste

Instructions

  1. Preheat the oven to 200C (400F).
  2. Toss sweet potato wedges in olive oil, smoked paprika, and salt. Spread on a baking sheet and bake for 20-25 minutes until crispy.
  3. Season chicken breast with olive oil, paprika, garlic powder, salt, and pepper. Grill over medium heat for 6-7 minutes per side until cooked through.
  4. Mash avocado with lime juice in a bowl; season with salt and pepper.
  5. Combine cherry tomatoes, diced avocado, red onion, olive oil, salt, and pepper in another bowl.
  6. To assemble bowls: Layer sweet potato fries on the bottom, top with sliced chicken, add guacamole and tomato-avocado salad.
