  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt & black pepper to taste
  • 1 cup cooked jasmine or basmati rice
  • 1 medium avocado, sliced
  • 1 cup roasted sweet potato wedges
  • 1 cup diced cherry tomatoes
  • 1 avocado, diced
  • 1 tbsp finely diced red onion
  • 1 tbsp chopped cilantro
  • Squeeze of lime juice

Instructions

  1. Marinate the chicken tenders with olive oil, garlic powder, smoked paprika, salt, and pepper for 10-15 minutes.
  2. Grill or sear the marinated chicken in a hot pan for about 3-4 minutes on each side until cooked through and charred.
  3. Toss sweet potato wedges with olive oil, salt, and pepper; roast in a preheated oven at 400°F (200°C) for 20-25 minutes until crisp.
  4. For the salsa, mix cherry tomatoes, avocado, red onion, cilantro, lime juice, and salt in a bowl.
  5. Assemble the bowl by layering cooked rice first; top with grilled chicken tenders, roasted sweet potatoes, salsa mixture, and avocado slices. Garnish with fresh parsley if desired.
