  • 1 cup cucumber, sliced
  • 1 cup cherry tomatoes
  • 23 lettuce leaves
  • Red onion, thinly sliced
  • 1 cup plain Greek yogurt
  • 1 tbsp fresh herbs (parsley, dill, or cilantro), chopped
  • 1 tsp lemon juice
  • 1 tsp olive oil
  • Salt & pepper, to taste

Instructions

  1. Season the chicken breast with salt, pepper, and olive oil. Grill or pan-sear for 5–6 minutes on each side until fully cooked; slice into strips.
  2. Prepare the rice according to package instructions; let cool slightly.
  3. In a mixing bowl, combine Greek yogurt, chopped fresh herbs, lemon juice, salt, pepper, and optional chili flakes.
  4. Slice cucumber, halve cherry tomatoes, and prepare red onion and lettuce.
  5. Assemble your bowl by layering rice first, then chicken strips and veggies on top; finish with a dollop of herb yogurt sauce.
