  • 1 chicken breast (cut into chunks)
  • 1 cup sweet potatoes (peeled & cubed)
  • 1 cup broccoli florets
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt & black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Toss sweet potato cubes with half the olive oil, smoked paprika, salt, and pepper. Spread evenly on a baking tray and roast for 20-25 minutes until golden brown.
  2. Season chicken chunks with garlic powder, onion powder, salt, and pepper. Heat grill pan over medium heat with remaining olive oil. Grill chicken for about 6-8 minutes until charred and fully cooked.
  3. In another pan, heat remaining olive oil over medium heat. Sauté broccoli florets for about 5-6 minutes until bright green and tender; season with salt and optional chili flakes.
  4. Assemble your plate by arranging grilled chicken, roasted sweet potatoes, and sautéed broccoli. Drizzle with lemon juice if desired.
