  • 1 cup cooked quinoa
  • 1 cup broccoli florets
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1 tsp olive oil
  • Salt, black pepper, garlic powder to taste
  • Optional: Lemon wedge for serving

Instructions

  1. Rinse and cook 1 cup dry quinoa with 2 cups water until fluffy (12-15 minutes). Set aside.
  2. Season the salmon fillet with salt, black pepper, and garlic powder. Heat olive oil in a skillet over medium heat. Pan-sear the salmon for about 4-5 minutes on each side until fully cooked through.
  3. Steam broccoli florets in a steamer basket for about 4-5 minutes until tender.
  4. Arrange the cooked salmon on a plate alongside quinoa. Add steamed broccoli, cucumber slices, and halved cherry tomatoes around the salmon. Serve warm with a lemon wedge if desired.
