  • 1 1/2 lbs boneless, skinless chicken breast (cubed)
  • 3 cups fresh pineapple (cubed)
  • 1 1/2 large green peppers (diced)
  • 1 large red onion (diced)
  • 1/3 cup ketchup
  • 1/3 cup packed dark brown sugar
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup canned pineapple juice
  • 4 Tbsp olive oil (divided, plus more for brushing grill)
  • 1 1/2 Tbsp rice vinegar
  • 4 garlic cloves (minced)
  • 1 Tbsp minced ginger
  • 1/2 tsp sesame oil
  • Salt and freshly ground black pepper

Instructions

  1. In a mixing bowl, whisk together the marinade ingredients.
  2. Marinate the chicken in a resealable bag with half of the marinade for at least 1 hour.
  3. Preheat the grill to medium heat.
  4. Assemble skewers by threading chicken, pineapple, peppers, and onion.
  5. Grill skewers for about 5 minutes; brush with reserved marinade and turn to cook for an additional 4 minutes until chicken reaches an internal temperature of 165°F.
