  • 3 cups powdered sugar

  • 23 tbsp pineapple juice (reserved from the can)
  • cup chopped pecans (optional)
  • cup sweetened shredded coconut (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a mixing bowl, combine flour, sugar, baking soda, and salt. Mix well.
  3. Add eggs, vanilla extract, and crushed pineapple with its juice to the dry ingredients; stir until combined.
  4. Pour batter into prepared pans and bake for 30–35 minutes or until a toothpick comes out clean.
  5. Let cakes cool in pans for 10 minutes before transferring to wire racks to cool completely.
  6. For the frosting, beat softened cream cheese and butter until smooth; gradually add powdered sugar and mix in vanilla extract and reserved pineapple juice until creamy.
  7. Assemble by placing one cake layer on a serving plate, spreading frosting on top, adding pineapple tidbits if desired, then topping with the second layer and frosting the whole cake.
