  • 12 chicken breasts
  • 2 medium potatoes (cut into wedges)
  • 1 small sweet potato (optional)
  • 1 tbsp olive oil
  • tsp dried oregano
  • tsp garlic powder
  • tsp chili flakes
  • Salt & pepper to taste
  • 2 medium tomatoes, chopped
  • cucumber, chopped
  • cup plain yogurt (Greek or regular)
  • 1 tsp dried mint or dill
  • garlic clove, minced

Instructions

  1. Preheat your oven to 200C (400F).
  2. Marinate chicken breasts with olive oil, oregano, garlic powder, chili flakes, salt, and pepper. Place on a baking tray.
  3. Toss potato wedges (and optional sweet potato) in olive oil, paprika, salt, and pepper. Spread on another tray.
  4. Bake chicken for 20-25 minutes and potatoes for 25-30 minutes until cooked through.
  5. Combine chopped tomatoes and cucumber in a bowl; season with salt and pepper.
  6. Mix yogurt with dried mint or dill and minced garlic; chill until serving.
  7. Plate chicken and potatoes alongside the salad and yogurt dip.
