  • 1 cup feta cheese, crumbled
  • 1/2 cup honey
  • 1/4 cup olive oil
  • 2 tablespoons red apple vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • 1 lemon, sliced (for serving)

Instructions

  1. In a medium bowl, combine honey, olive oil, red apple vinegar, minced garlic, dried oregano, red pepper flakes, salt, and pepper. Whisk until blended.
  2. Place chicken in a resealable bag or shallow dish and pour marinade over it. Ensure each breast is coated well. Seal the bag or cover the dish and refrigerate for at least 30 minutes (preferably up to 4 hours).
  3. Preheat oven to 400°F (200°C). Remove chicken from marinade and discard excess marinade.
  4. Place chicken in a baking dish and top evenly with crumbled feta.
  5. Bake for 25 to 30 minutes until chicken reaches an internal temperature of 165°F (75°C) and feta is golden.
  6. Let rest for about 5 minutes before serving. Garnish with parsley and serve warm with lemon wedges.
