  • 1 cup zucchini, chopped
  • 1 cup cherry tomatoes, halved

  • Salt and cracked black pepper to taste
  • Optional: squeeze of lemon

  1. 1. Season the salmon fillet with salt and pepper. Heat 1 teaspoon of olive oil in a skillet over medium-high heat. Sear the salmon for about 3-4 minutes on each side until golden brown and cooked through. Set aside.
