  • 1 cup chopped fresh peaches (divided into 3/4 and 1/4 for topping)
  • 1/4 cup flour (for topping)
  • 3 tablespoons sugar (for topping)
  • 1/2 teaspoon baking powder (for topping)
  • 1/2 teaspoon cinnamon (for topping)
  • 4 tablespoons cold unsalted butter (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease or line a muffin tin.
  2. In a large bowl, whisk together flour, baking powder, salt, and sugar.
  3. In another bowl, combine milk, egg, vegetable oil, and vanilla; mix until blended.
  4. Gradually add wet ingredients to dry ingredients; stir gently until just combined.
  5. Fold in three-quarters of the chopped peaches.
  6. For the topping: Combine flour, sugar, baking powder, cinnamon, and cold butter in a small bowl until crumbly.
  7. Fill muffin cups with batter two-thirds full; sprinkle reserved peaches and topping mixture over each.
  8. Bake for about 20 minutes or until golden brown; cool slightly before serving.
