  • 6 to 7 ripe peaches ( pounds, sliced)
  • ¾ cup granulated sugar (divided into two portions)
  • 1 tablespoon lemon juice
  • 2 teaspoons cornstarch
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon (optional)
  • 1 cup all-purpose flour
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup cold unsalted butter (1 stick, cubed)
  • ¼ cup boiling water
  • 1 tablespoon coarse sugar (optional)

Instructions

  1. Preheat your oven to 375°F.
  2. Slice and optionally peel the peaches. In a bowl, mix peaches with ¾ cup sugar, lemon juice, cornstarch, vanilla extract, and cinnamon; let sit for 10 minutes.
  3. In another bowl, combine flour, remaining sugar, baking powder, and salt. Cut in cold butter until mixture resembles coarse crumbs.
  4. Stir in boiling water until just combined; do not overmix.
  5. Pour peach mixture into a baking dish and dollop the topping over it.
  6. Sprinkle with coarse sugar if desired and bake for 38 to 42 minutes until golden brown.
