  • 2 medium sweet potatoes
  • 1 ripe avocado
  • 150g cherry tomatoes
  • Plain Greek yogurt
  • Olive oil
  • Lime juice

Instructions

  1. Preheat oven to 200C (400F).
  2. Toss sweet potato wedges in olive oil, cumin, paprika, salt, and pepper; spread on a baking sheet and roast for 25 minutes.
  3. Season chicken strips with olive oil, lime juice, smoked paprika, garlic powder, salt, and pepper; grill for 5-6 minutes per side until cooked through.
  4. Combine diced avocado, halved cherry tomatoes, finely chopped red onion, cilantro, lime juice, salt, and pepper in a bowl to make salsa.
  5. Mix plain Greek yogurt with lemon juice and herbs for the dip.
