  • 1 cup milk (or plant-based alternative)
  • 2 large eggs
  • ⅓ cup pure maple syrup or honey
  • ¼ cup melted unsalted butter or coconut oil
  • 2 teaspoons pure vanilla extract
  • ½ cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×9-inch baking dish.
  2. In a large bowl, combine the rolled oats, pumpkin pie spice, baking powder, and salt.
  3. Stir in the pumpkin puree, milk, eggs, maple syrup (or honey), melted butter (or coconut oil), and vanilla extract until well mixed.
  4. Pour the mixture into the greased baking dish and top with additional pecans if desired.
  5. Bake for 30-34 minutes until set; check doneness with a toothpick.
  6. Let cool for 5 minutes before slicing and serve warm topped with yogurt or whipped topping.
