  • 1/3 cup white chocolate chips
  • Granulated sugar, as needed, for rolling

Instructions

  1. In a non-stick skillet over medium heat, melt butter and mix in cream cheese, pumpkin puree, sweetened condensed milk, and pumpkin pie spice until thickened.
  2. Stir in graham cracker crumbs and white chocolate chips until smooth; add food coloring if desired.
  3. Spread the mixture onto a greased baking sheet and refrigerate for about 2 hours until firm.
  4. Roll chilled mixture into small balls using buttered hands.
  5. Coat each truffle in granulated sugar and decorate with chocolate chips.
