  • 8 ounces block-style cream cheese (softened but still cool)
  • 1/4 cup unsalted butter (softened but still cool)
  • 1 teaspoon pure vanilla extract
  • 1 3/4 cups confectioners’ sugar (sifted)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin pie spice.
  3. In a separate bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy. Add pumpkin puree, egg, and vanilla extract; mix well.
  4. Gradually combine dry ingredients with wet mixture until just incorporated.
  5. Scoop heaping tablespoons of dough onto the prepared baking sheet, spacing them 2 inches apart.
  6. Bake for 13 to 15 minutes until edges are set but centers remain soft. Cool on a wire rack.
  7. For frosting, beat cream cheese and softened butter until smooth; gradually add confectioners' sugar and vanilla extract until combined.
  8. Once cookies are cool, frost generously and sprinkle with cinnamon if desired.
