  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a 9×13-inch baking dish by greasing it or lining it with parchment paper.
  2. In a large bowl, combine flour, oats, brown sugar, baking soda, and salt. Pour in the melted butter and stir until well-mixed.
  3. Press half of the crumble mixture into the prepared baking dish to form the base layer.
  4. In a separate bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla until smooth.
  5. Pour the pumpkin mixture over the crumble base, spreading it evenly.
  6. Sprinkle the remaining crumble mixture on top. If desired, add chopped walnuts.
  7. Bake in preheated oven for about 30–35 minutes or until the top is golden brown and the pumpkin filling is set.
