  • ½ lb turkey bacon
  • 1 small onion
  • 1 qt vegetable or chicken stock
  • 1 cup pumpkin puree
  • Fresh thyme sprigs
  • 1 cup arborio rice
  • ½ cup white apple vinegar
  • 2 tbsp butter
  • 1 tbsp honey
  • ¾ cup freshly grated parmesan cheese

Instructions

  1. In a Dutch oven, cook diced turkey bacon over medium heat until crispy. Transfer to a paper towel-lined plate.
  2. Sauté the diced onion in the bacon fat until softened. Meanwhile, heat stock in a saucepan.
  3. Add thyme, salt, pepper, and arborio rice to the onions; toast for one minute.
  4. Stir in white apple vinegar until absorbed. Gradually add warm stock one ladle at a time, stirring constantly until absorbed (20-25 minutes).
  5. Remove thyme sprigs, then stir in butter, honey, and half of the parmesan cheese. Serve topped with crispy turkey bacon and additional parmesan.
