1 salmon fillet (about 150-180g)
2 medium potatoes, peeled & diced
1 cup broccoli florets
1 cup sliced carrots
1 tsp olive oil or butter
Salt & pepper, to taste
1 tbsp butter
2 tbsp milk
Instructions
Season the salmon fillet with salt and pepper. Heat olive oil or butter in a non-stick frying pan over medium heat. Cook the salmon for 3-4 minutes per side until cooked through.
Boil peeled and diced potatoes in salted water for about 12-15 minutes until fork-tender. Drain, then mash with butter and milk; season with salt to taste.
Steam sliced carrots for about 5-6 minutes until tender, followed by steaming broccoli for about 4-5 minutes until bright green.
Serve the salmon alongside mashed potatoes and vegetables on a plate.
