  • 1 salmon fillet (about 150-180g)
  • 2 medium potatoes, peeled & diced
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 tsp olive oil or butter
  • Salt & pepper, to taste
  • 1 tbsp butter
  • 2 tbsp milk

Instructions

  1. Season the salmon fillet with salt and pepper. Heat olive oil or butter in a non-stick frying pan over medium heat. Cook the salmon for 3-4 minutes per side until cooked through.
  2. Boil peeled and diced potatoes in salted water for about 12-15 minutes until fork-tender. Drain, then mash with butter and milk; season with salt to taste.
  3. Steam sliced carrots for about 5-6 minutes until tender, followed by steaming broccoli for about 4-5 minutes until bright green.
  4. Serve the salmon alongside mashed potatoes and vegetables on a plate.
