  • 2 boneless chicken breasts, sliced into thin strips
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1 cup mushrooms, sliced
  • 1 cup carrots, julienned
  • 1 bell pepper, sliced (any color)
  • 2 green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, minced
  • 2 cups cooked rice

Instructions

  1. Marinate sliced chicken in soy sauce and cornstarch for 10 minutes.
  2. Heat a wok or large skillet over medium-high heat and add oil.
  3. Stir-fry the marinated chicken for 5-7 minutes until golden brown; set aside.
  4. In the same pan, sauté mushrooms, carrots, bell pepper, and green onions for 3-5 minutes until tender yet crisp.
  5. Return chicken to the pan and add the sauce (soy sauce, sesame oil, ginger). Mix well.
  6. Serve hot over cooked rice.
