  • 1 tablespoon olive oil
  • 3 tablespoons butter (divided)
  • 2 small zucchini (cut into thin, half moon slices)
  • salt and black pepper (to taste)
  • 1 small yellow onion (finely diced)
  • 1 pound small button mushrooms (cleaned and patted dry)
  • 3 to 4 cloves garlic (minced)
  • 2 teaspoons fresh chopped herbs (thyme and oregano are great in this dish)
  • ¼ cup vegetable broth
  • chopped fresh parsley (for garnish)
  • grated parmesan (for garnish)

Instructions

  1. Heat olive oil and half a tablespoon of butter in a large skillet over medium-high heat.
  2. Sauté zucchini slices for 3 to 4 minutes until tender; set aside.
  3. Add remaining butter and diced onions to the skillet; cook for 2 minutes until softened.
  4. Stir in mushrooms and cook for 5 to 7 minutes until browned.
  5. Add minced garlic and fresh herbs; cook for another 20 seconds.
  6. Return zucchini to skillet, mixing well; heat through for about 1 minute.
  7. Pour vegetable broth into the skillet; cook for an additional 2 minutes, adjusting seasoning as needed.
  8. Serve garnished with parsley and grated parmesan.
