  • 2 tbsp vegetable or coconut oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced (plus extra for naan)
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry paste
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 beef stock cube
  • 1 can (14 oz) coconut milk
  • 2 tbsp tomato paste
  • Salt and freshly ground pepper to taste

Instructions

  1. Gather all ingredients. Prepare the beef by cutting it into cubes. Finely chop the onion, mince the garlic, and grate the ginger.
  2. Heat oil in a skillet over medium heat. Sauté the onion until translucent (about 5 minutes), then add minced garlic and ginger; cook for an additional minute.
  3. Stir in curry paste, turmeric, cumin, and paprika; cook for another minute.
  4. Transfer the sautéed mixture to a slow cooker. Add cubed beef, beef stock cube, coconut milk, tomato paste, salt, and pepper. Mix well.
  5. Cover and cook on low for 6–8 hours until the beef is tender.
  6. If desired, prepare homemade garlic naan by brushing flatbreads with minced garlic before lightly toasting them in a skillet.
  7. Serve hot garnished with fresh cilantro.
