  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper, optional
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) full-fat coconut milk
  • 1 tbsp tomato paste
  • Salt and pepper, to taste

Instructions

  1. Prepare all ingredients by chopping onions, mincing garlic, grating ginger, and cutting beef into cubes.
  2. In a pan over medium heat, melt coconut oil, then add chopped onion, minced garlic, and grated ginger. Sauté until fragrant.
  3. Stir in the curry powder, ground turmeric, ground cumin, and cayenne pepper. Cook for an additional minute.
  4. Transfer the sautéed mixture to a slow cooker along with the beef cubes, diced tomatoes, coconut milk, tomato paste, salt, and pepper. Mix well.
  5. Cover and cook on low for 6-8 hours until the beef is tender.
