  • Salt & black pepper, to taste
  • 1 avocado, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1 cup microgreens or lambs lettuce
  • 1 slice whole grain or sourdough bread
  • Optional: chili flakes, olive oil drizzle

Instructions

  1. Crack the eggs into a bowl and whisk until combined.
  2. Heat a non-stick skillet over low heat and add butter or olive oil.
  3. Pour in the beaten eggs, gently stirring as they begin to set. Cook until softly set, then season with salt and pepper.
  4. While the eggs cook, slice the avocado and cucumber, and halve the cherry tomatoes. Rinse microgreens under cold water.
