  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • Sea salt flakes
  • ½ cup butter (for caramel sauce)
  • 1 cup brown sugar (for caramel sauce)
  • ½ cup cream (for caramel sauce, can be substituted with non-dairy cream)

Instructions

  1. Preheat your oven to 350°F and lightly butter an 11 x 8-inch baking dish.
  2. Soak chopped dates in scalded milk mixed with baking soda for about 15 minutes.
  3. In one bowl, combine flour, baking powder, and salt; in another, whisk eggs.
  4. Blend eggs with dark brown sugar, butter, and vanilla extract in a food processor until smooth. Gradually add dry ingredients and mix until combined.
  5. Stir in the cooled date mixture until smooth. Pour batter into the greased dish and bake for 30 minutes or until set.
  6. For the caramel sauce, melt butter and stir in brown sugar and cream until bubbling. Simmer for about 10 minutes until thickened.
  7. Once baked, poke holes in the pudding and pour one-third of the caramel sauce over it to soak for 15 minutes before serving.
