1 medium sweet potato, cubed
1 tsp olive oil
Salt & pepper to taste
150g (5 oz) lean ground beef
1 tsp smoked paprika
1 tsp garlic powder
1 avocado, sliced
½ cup cottage cheese
1–2 tsp honey (for drizzling)
Instructions
Preheat oven to 200C (400F). Toss cubed sweet potatoes with olive oil, salt, and pepper. Spread them evenly on a baking sheet. Roast for 20-25 minutes, flipping halfway through until golden and tender.
In a skillet over medium heat, cook the ground beef until browned, breaking it apart with a spoon. Season with smoked paprika, garlic powder, salt, and pepper. Stir well to combine.
In a mixing bowl, arrange the roasted sweet potatoes at the bottom. Add the cooked beef on top. Layer with sliced avocado and cottage cheese.
Drizzle honey over the avocado and cottage cheese. Finish with a sprinkle of black pepper for an added kick.
