  • 1/4 cup (60 g) ice water (more as needed)
  • 1/4 cup (60 g) lemon juice (cold)
  • 1 lb sweet potatoes (about 2 medium)
  • 5 tablespoons (70 g) softened unsalted butter
  • 1 cup (200 g) dark brown sugar (packed)
  • 3 large eggs
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1 teaspoon salt
  • 1 1/4 cup (310 g) evaporated milk
  • 1 tablespoon (15 g) vanilla extract
  • 1 egg (for topping)
  • 1 tablespoon milk

Instructions

  1. Preheat oven to 400°F (200°C). Boil sweet potatoes until tender (about 30 minutes), then drain and mash until smooth.
  2. In a bowl, combine flour, salt, and sugar. Cut in cold butter until crumbly. Add ice water and lemon juice to form dough; refrigerate for 30 minutes.
  3. Mix mashed sweet potatoes with softened butter in another bowl. Add dark brown sugar, eggs, spices, salt, evaporated milk, and vanilla; blend thoroughly.
  4. Roll out chilled dough into the pie dish and pour in the filling evenly.
  5. Brush crust edges with whisked egg and milk for a golden finish. Bake for about 90 minutes until set.
  6. Let cool before serving with whipped cream.
