  • 3 ancho peppers
  • 3 pasilla peppers
  • 2.5 pounds beef chuck (cut into bite-sized cubes)
  • 1 medium white onion (chopped)
  • 3 jalapeno peppers (chopped)
  • 4 cloves garlic (chopped)
  • 2 cups beef stock
  • 2 tablespoons masa harina
  • 2 teaspoons cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2.5 cups water (+ more as needed)
  • 1 tablespoon brown sugar

Instructions

  1. Toast the dried peppers in a dry pan for 1-2 minutes per side until fragrant.
  2. Remove from heat, cool slightly, then soak the toasted peppers in hot water for 20 minutes.
  3. Blend soaked peppers with ½ to 1 cup of soaking water and salt until smooth; set aside.
  4. In a bowl, season cubed beef with cumin, salt, and pepper.
  5. Heat olive oil in a large pot over medium-high heat; sear the beef for about 6-7 minutes until browned. Remove and set aside.
  6. In the same pot, add remaining olive oil and cook onions and chopped jalapenos for about 5 minutes until soft.
  7. Stir in garlic; cook for another minute.
  8. Return beef to the pot; mix in the chili paste and cook for 2-3 more minutes.
  9. Add beef stock, water, brown sugar, and masa harina; bring to boil.
  10. Reduce heat and simmer covered for about 2 hours or until beef is tender.
