  • 1 medium onion (diced)
  • 2 pounds ground beef (or beef chuck)
  • 2 tablespoons diced garlic
  • 1 tablespoon Italian seasoning blend
  • 2 teaspoons chili powder
  • 1 tablespoon smoked paprika
  • 1 tablespoon brown sugar
  • 1 tablespoon vinegar
  • 2 cans crushed tomatoes (14 oz each)
  • 2 cans red kidney beans (15 oz each), drained
  • Jalapeños (sliced)
  • Masa harina (for thickening)

Instructions

  1. In a Dutch oven, heat canola oil over medium heat. Add diced onion and cook until soft, about 3-5 minutes. Stir in garlic and ground beef; cook until browned.
  2. Reduce heat to medium-low. Mix in Italian seasoning, chili powder, smoked paprika, brown sugar, vinegar, crushed tomatoes, kidney beans, jalapeños, salt, black pepper, and red pepper flakes.
  3. Allow to simmer for about 10 minutes then stir in masa harina to thicken the chili. Cook for an additional 10 minutes until desired thickness is reached.
  4. Serve hot with optional toppings like cheese or avocado slices.
